Food Safety Supervisor (Level 2)

SITXFSA006 Participate in Safe Food Handling Practices

This course provides the skills and knowledge required to supervise food safety practices and ensure compliance with NSW food safety legislation.

It covers advanced safe food handling practices to prevent contamination and food-borne illness across storage, preparation, display, service and disposal of food, and requires the ability to follow and implement employer-specific food safety programs and procedures.


Language, Literacy and Numeracy (ACSF)

To successfully complete this course, participants should have skills aligned to the following Australian Core Skills Framework (ACSF) levels:

  • Reading: Level 3

  • Writing: Level 2–3

  • Oral Communication: Level 2–3

  • Learning: Level 3

  • Numeracy: Level 2

Participants must be able to interpret food safety legislation, organisational food safety programs, allergen procedures, and cleaning schedules; communicate food safety risks; maintain documentation; and oversee compliance in a workplace setting.

NSW Food Safety Supervisor Requirement

Under NSW food laws, all retail, hospitality and food service businesses must appoint at least one Food Safety Supervisor (FSS) per premises where food is:

  • Ready-to-eat

  • Potentially hazardous (requires temperature control), or

  • Not sold and served in the supplier’s original package

This requirement ensures compliance with the Food Standards Code, NSW Food Act, and Food Regulation.


Who Should Attend?

This course is designed for:

  • Food Safety Supervisors

  • Supervisors and managers in food businesses

  • Senior food handlers with responsibility for food safety compliance

  • Individuals required to obtain or renew an NSW Food Safety Supervisor Certificate

It applies to organisations with permanent or temporary kitchen facilities, food preparation areas, or bar areas.


Course Overview

This course incorporates the mandatory allergen and egg safety modules required by the NSW Food Authority and provides advanced training in:

  • Implementing food safety practices aligned with regulatory and organisational requirements

  • Monitoring and managing risks associated with potentially hazardous foods

  • Overseeing cleaning, sanitising and allergen management procedures

  • Maintaining food safety programs and accurate records for inspections


Certification

Upon successful completion of assessment tasks, students will be awarded:

  • Statement of Attainment for
    SITXFSA006 – Participate in Safe Food Handling Practices

  • NSW Food Safety Supervisor Certificate, issued within 10 working days

The NSW Food Safety Supervisor Certificate is valid for five (5) years.


Expiry & Recertification

When a Food Safety Supervisor’s certificate expires, a food business has 30 days to ensure that either:

  • The expired FSS completes a recertification course within 30 working days, or

  • Another eligible staff member with a current qualification is appointed as the FSS


Important Information

  • There are no formal entry requirements; however, this is a higher-level course

  • Participants should have a working knowledge of basic food safety principles and workplace procedures

  • If you do not require an NSW Food Safety Supervisor Certificate, consider Safe Food Handling (Level 1), which meets many workplace needs and is a pre-requisite unit for many SIT Hospitality qualifications

  • Participants must provide valid photo identification on the day of training
