Safe Food Handling (Level 1)

SITXFSA005 Use Hygienic Practices for Food Safety

This course provides the essential skills and knowledge required to apply personal hygiene practices in the food industry and prevent food contamination.

The training incorporates the mandatory allergen and egg safety modules required by the NSW Food Authority and complies with the Australia New Zealand Food Standards Code.


Language, Literacy and Numeracy (ACSF)

To successfully complete this course, participants should have skills aligned to the following Australian Core Skills Framework (ACSF) levels:

  • Reading: Level 2

  • Writing: Level 2

  • Oral Communication: Level 2

  • Learning: Level 2

  • Numeracy: Level 2

Participants must be able to read and interpret food safety procedures, hygiene signage and policies, identify hazards, follow instructions, and communicate hygiene risks or non-compliance accurately.

This course is essential for anyone who directly handles food or food-contact surfaces, including those working in:

  • Restaurants, cafés, bars and hotels

  • Fast-food outlets

  • Aged care facilities and hospitals

  • Catering and event services

It is suitable for cooks, chefs, kitchen hands, caterers, and all food handling staff.


Course Overview

In this course, you will learn to:

  • Implement personal hygiene practices to ensure food safety

  • Identify and manage food hazards to prevent contamination

  • Follow organisational and regulatory food safety requirements

  • Maintain clean and sanitary food-contact surfaces, including utensils and equipment

  • Comply with allergen and egg safety requirements


Certification

Upon successful completion of assessment tasks, students will be awarded a:

  • Statement of Attainment for
    SITXFSA005 – Use Hygienic Practices for Food Safety


Important Information

  • There are no formal entry requirements for this course

  • This course is a pre-requisite for NSW Food Authority Food Safety Supervisor certification

  • Participants must provide valid photo identification on the day of training
